The Psoas major muscle is the primary hip flexor in the body. It is responsible for lifting your knee to your chest when running or climbing stairs. Cows and other four legged animals have very little need for this muscle. This means the most tender cuts of meat come from the Psoas major of a cow...aka the filet mignon
